Black-Eyed Beans Soup Recipe

 

 

Ingredients: (Serves 2, 200 calories per serving)

  • 200 g (7 oz) black-eyed beans
  • 200 g (7 oz) carrots
  • 1 chopped onion
  • Garlic cloves, crushed
  • Thyme
  • Parsley
  • Vegetable stock cube

Method:

Saute the carrots, onion and garlic in a pan. Add 285 ml (10 fl oz) boiling water, thyme and beans and cook for 2-3 hours on low heat. Sprinkle with parsley and serve while still hot.
