Broad Bean Salad Recipe

 

 

Ingredients: (Serves 2, 70 calories per serving)

  • 150 g (5½ oz) broad beans
  • 1 clove garlic
  • 1 stalk fresh fennel
  • Flax oil
  • White wine vinegar
  • Black olives

Method:

Either boil fresh green broad beans for 40 minutes or use canned ones. Strain and put in a bowl. Add rushed garlic. Beat the oil and vinegar and pour over the beans. Sprinkle with fennel and garnish with black olives.
