Chicken with Apricots Recipe

 

 

Ingredients: (Serves 2, 400 calories per serving)

  • 2 chicken breasts, grilled or boiled
  • 150 g (5½ oz) apricots, sliced
  • 10 g (¼ oz) cashew nuts
  • 6 cloves of garlic, crushed
  • Honey

Method:

Stir fry the apricots, nuts and garlic in olive oil, add some vinegar and 1 teaspoon honey, mix and serve as sauce for chicken. Add a dash of lemon juice and ground ginger. Serve.
