Fish Soup Recipe

 

 

Ingredients: (serves 2, 280 calories per serving)

  • 300 g (10½ oz) whitebait
  • 1 carrot, sliced
  • 1 small onion, sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon olive oil
  • 1 small sliced potato
  • 50 g (2 oz) brown rice
  • Parsley
  • Lemon juice

Method:

Boil the fish in a pan. Sieve and put the broth back in the pan. Saute the vegetables with the fish and then add to the broth. Add the fish. When the rice is cooked, add tomato paste, olive oil, salt and simmer for five minutes. Add lemon juice and garnish with parsley. Serve hot.
