Vegetables with Brown Rice Recipe

 

 

Ingredients: (Serves 2, 290 calories per serving)

  • 1 small onion, chopped
  • 5 ml (1 teaspoon) perilla oil
  • 500 g (2 oz) brown rice
  • 1 chopped tomato
  • 175 ml (6 fl oz) water
  • Mixed herbs
  • 1 vegetable stock cube
  • 50 g (2 oz) mushrooms
  • 50 g (2 oz) peppers
  • 50 g (2 oz) runner beans

Method:

Cook the onion in oil, add rice and cook for a minute. Add tomato, water, herbs and cube. Simmer for 30 minutes. Add mushrooms, peppers and beans. Simmer for another 10 minutes.
